Hey there! Raya is less than a week left. Since I took two days off from work, I decided hey, why not do some Raya cookies? After searching online with the help of Mr Google, I found a simple recipe that requires no baking whatsoever. Cool, 'coz I don't quite know how to operate mum's microwave cum oven cum some-other-weird-stuff. :D:D:D
Ingredients:
Cornflakes (No measurements here; I add in until the cornflakes are fully coated)
500 g Baking chocolate
250 g Almond strips
Honey to your preference
200 g White baking chocolate (for deco)
Steps:
- First, roast almonds until they become golden brown. Monitor them closely as you don't want them to burn. Leave to cool.
- Melt chocolate using double boiler method. Some prefer melting on the stove but I like to use the rice cooker as the heat is more manageable and the chocolate will not harden as I prepare other ingredients.
- Add some honey. I skipped this step because I'm not into sweet stuff.
- While waiting for the chocolate to melt, crush the cornflakes to smaller pieces. Make sure they're still coarse but fine enough to spoon into the papercups.
- Once the chocolate is melted, add in the crushed cornflakes and almonds. Fold until they are evenly coated.
- Line the paper cups and spoon some batter into them.
- Lastly, decorate with white chocolate. Let them cool in room temperature.
Here's the end result:
The batch I made makes up 2 big jars plus one slightly smaller one, as shown below.
